My niece invited me to participate in an old school Recipe Exchange. Although I normally would skip out on this type of thing I had just the simple non-recipe that is perfect for these times. It's so made up that I don't even have it on my website. That being said, if you'd like to peruse my weight loss coach recipes (which double as a prediabetes cookbook), then see the link below. Otherwise, I'd love to know what easy meals you've come to love!

Veggie-Bean Hash
Serves 4 (or just 1)

Ingredients:
~ 4 servings each of any of two veggies you like (i.e. in the winter I might do roasted cubes of butternut squash with steamed broccoli, while other times of the year I might do sauteed eggplant and mushrooms, or roasted brussels sprouts and zucchini)
~ ½ to 1 can black beans, rinsed and drained (approx ¼ to ½ scant cup for each serving--use the smaller amount if you're low-carb)
~ whatever cheese you like (I do about ½ serving of fresh shredded parmesan and an ounce of fresh mozzarella per serving)
~ 4 large eggs

Directions:
Roast or steam or saute whatever veggies you are using in olive oil or butter ahead of time. (Note usually I freeze extras in mini serving containers so I can pull them out in a moment’s notice.)
Assemble your plate with the other ingredients, including beans and cheese—microwave to melt the cheese.
Use just a little oil or butter and one egg at a time fry one egg over easy. Add to the plate and break open to let the yolk run. Enjoy!

"Let food be thy medicine" is important moreso now than ever. As some of you know, 3.5 years ago I flickered into the prediabetes range, with an A1C lab of 5.7. At the time I was completely shocked. After all, I've been living my own healthy lifestyle and sustained 70-lb weight loss for over 25 years now. I'm also the weight loss coach who helps working women develop the skills to naviqate doing it all without resorting to stress eating.

Statistics show that 1 out of 3 American adults have prediabetes--and more than 80% don't know it! So even I, the most unlikely of candidates, was no exception. The day I received that diagnosis was a pivotal day for me and the start to gaining even better control over carbs and sweets--educating myself, blood testing for which foods work and don't for my particular body, and persevering. One outcome of that health journey is the book below.

Working with Sarah as my weight loss coach has been a wonderful experience that has exceeded my expectations. My satisfaction with my eating habits, body, and belief in my own abilities have each increased four-fold! (Sarah actually uses metrics to assess this, so I know in real numbers what value I’ve received.) Unlike most weight loss programs this individual approach was key, as what works for others may not work for me. At the same time, I’ve learned that weight loss isn’t the panacea I always thought it was, and I’m working to count my blessings and see wellness in a whole new perspective. I have learned strategies to keep me in weight loss maintenance for two years now and am actively working toward an even healthier lifestyle, which I was never able to do before. (This is a huge success I never realized, since I was always after the next lowest weight I thought I “should” be.) For example, I am more in tune with my eating habits; I realize that negative self-talk has been a major part of my eating problem, and now I readily identify it, stop, and turn it around. Sarah has a gift for cheering on my goals and accomplishments no matter how big or small. Just when I think I can’t move forward I learn something new to apply each time we coach. I know myself better and am much more positive about my journey than ever. Since my faith is a large part of who I am, I also appreciate how Sarah guides me to tap into it so I can find the many joys my life has!
