It is with a heavy heart that I announce the passing of our Vice President, Andy Cataline. Andy devoted many, many years to the IAC and the ideals that we uphold. He was selfless, and dedicated as he donated countless hours for the benefit of the club, our members and beneficiaries of our many community projects. Our sincerest condolences, thoughts and prayers go out to his family.

Today, on February 7, #NationalFettuccineAlfredoDay celebrates one of the world’s favorite ways to enjoy a plate of fettuccine, a dish comprised of fettuccine, butter and parmigiano.

This dish is often associated with the decline of the Italian American culinary tradition, and in Italy, the dish has been widely marginalized and almost considered almost an offense to tradition. But in reality, its recipe has its origins rooted very firmly in Italian culinary craftsmanship.

Created in 1908, fettuccine was made out of love and concern by an Italian restaurateur in Rome. Alfredo di Lelio was concerned for his wife after she was weakened by the protracted labor of their son, Alfredo II. Legend has it that Alfredo senior decided to prepare an invigorating and tasty meal for his wife that would help her to recover her strength. His recipe of noodles, cheese, and butter not only encouraged her, but she fell in love with the recipe and encouraged him to put it on the menu at their trattoria called Alfredo alla Scrofa.

After WWI, Americans discovered Alfredo's restaurant and scrumptious dish and nothing has been the same since. His restaurant was eventually sold in 1948, but Alfredo II opened up Il Vero Alfredo (https://www.ilveroalfredo.it/storia/) in 1950. Both establishments honor Alfredo senior's legacy.

To read more details about the history of this dish, read the article from the "All About Italy" magazine here:http://bit.ly/2S7D6t2.
