Finished drying around 3 kilos of mushrooms, which when done were reduced to a meager 600g, this reduction in weight explains why when we buy dried mushrooms from speciality shops we have to pay so much... The scent intensifies on drying and apart from being able to preserve them for an entire year drying increases umami levels that makes them ideal for stock bases for pasta sauces and risottos. I also like to grind them to powders to add on top of soups and anything in need of an umami injection. To dry them just place the chopped and clean mushrooms in a 50degree Celsius oven for 10 hours, leave the door to the oven a bit open for all the steam to escape, place in glass jars to store for a year or even more. #chickenofthewoods #driedmushrooms #mushrooms #funghi #preserving #seasonal #foragedingredients #instalike #nofilter #instafollow #instagood #instalike #foodphotography #naturallight #paris

As much as I would like to add a couple of hours more per day as well as be able to be at more then one place at a go I know I cannot... at the moment I am not posting much as I have my hands full to the brim... I still cook copiously and at the moment testing a lot of new recipes and techniques for an upcoming project called @la_betenoire , and photographing the food I am preparing has fallen somehow down in the priority list. Before meeting Jacqui I thought that having a menu based entirely on locally foraged ingredients was impossible, the last months spent with Jacqui have been a huge learning curve for me, she is indeed a precious person, teacher and mentor, and will be an essential element in building a food identity for @la_betenoire her guided expertise in botany has enriched my cooking in the most marvelous of ways. Apart from all the above as if that was not enough Jacqui will be the supplier for jams prepared from foraged and hand picked fruits as well as some beautiful custom made botanical digestives. Chose a photo depicting her hands because I think hands offer the best portrait for any artist especially for those working in ceramics and other forms of sculpture. Met Sue around a year in her wonderful studio which happens to be in Rabat, the same village my home in Malta was. All the pieces commissioned will be treasured and made good use of @la_betenoire I am sure you will all enjoy getting your hands on these fired clay beings, whilst pouring your water, drinking and scooping big spoons of thick balmy fish stew to clean it off your plates with nice big chunks of bread. People and @la_betenoire #2 @caffe_juno... Since coming here I have learnt two things about coffee, the first is that it's rare to find good food and good coffee under one roof and with the exception of a couple of places around town I am convinced that this statement is absolutely true. The second is that places that sell and prepare great coffees can be, even if done unintentionally very intimidating places, especially for people who are new to this wonderful albeit vast niche, it's disheartening to want to learn about something but just feel too shy and uncool looking to approach the person preparing your coffee. One thing I was sure of when planning how the coffee corner @la_betenoire will work out is that I wanted awesome coffee to go with the food on the menu but also, and this was of equal importance to me to have an approachable and un intimidating team taking care of your daily coffee needs. I was extremely lucky to have known the couple behind @caffe_juno for two years now. Bartolommeo and Catherine both having very different responsibilities within the company share a wonderful passion for this magic bean, they are two of the most down to earth people I have had the pleasure to encounter and every day whilst making deliveries at their shop I used to silently notice their consistency in both coffee quality as well as the kindness and time dedicated to their clients. @la_betenoire feels extremely blessed to be working with these two professionals involved in both Selection and Roasting of their beans, and the undisputed advantage of having them behind the bar preparing coffee for all the patrons of La Bête Noire... will post pictures of both of them in the coming days as I know they will be important faces in this new adventure! #weopeninseptember @la_betenoire #caffejuno #specialitycoffee #coffee #torrefacteur #caffeinelover #coffeetime #instafollow #instagood #instalike #ourcoffeecorner #paris #58ruehenribarbusse #labetenoire

People and La Bête Noire #1 Maria... A lot of people are asking me why I chose this name for this project and I always get tongue tied when inquired on the spot... Thing is I know exactly why I chose this name, I chose it because it represents the ability to comfortably not fitting in, yet loving every moment of it. Good looks have always failed me, I have big arms and a chipped tooth, and swear almost all the time and most of all never felt a full sens of belonging anywhere until we moved to Paris that is, where the lack of fluent spoken French led me to communicate with others through cooking, the more I cooked the more wonderful people I met, cooking was a very reinforcing element in making my life here so much more pleasant then any where else. In the kitchen my face softens, my big arms are perfect for lifting 25 kg flour bags and my chipped tooth looks sort of cool... Food @la_betenoire will be a spoken language, it will be my way of telling you stories as you eat your way through the menu, and as all languages the food here will evolve according to the conversations we will have in the coming years! Dinner#3 @la_betenoire : Fish and Chips ... This is a childhood dish, which used to be prepared in the most romantic of ways by my grandmother, who used to fashion a small improvised paint brush with a rosemary stalk to which she would attach parsley leaves, she would baste the fish with this parsley paintbrush whilst they fried away in her little pan with plenty of oil and lemon juice and salt , the chips were special because they were cut round by hand , and round chips were always a reason to celebrate. Not at home for more then a couple of hours per day lately, and not doing much cooking either... but the good thing that came out of my absence from the kitchen is that I'm leaving my bread to rise quietly, and it seems that without my nervous gaze the little loaves are doing very well... no form of commercial yeast came close to this loaf, just the ones floating around in my tiny Parisian kitchen which considering how much cooking has been done in the place I'm assuming there is quite a varied flora :-) the test is in the inside once this one is baked, usually I get a really tight loaf, never managed the big airy holes that hold inside them bread essence... most probably this one will be the same, still hopeful it might turn out good this time. #sourdough #dough #bread #proofing #proofingbasket #frenchkitchens #breadtests #instalike #instafollow #instabread #labetenoire #58ruehenribarbusse #design #kitchens #love #eateat #work #play #bakebread #paris

Ideally chocolate should be melted in a Bain Marie, by the gentle strokes of steam however we all know that the microwave is an awesome tool for doing this chore, most times with better results then the former method... and one thing I discovered at 5 am this morning is that if using a microwave to melt your chocolate it is even better to do so in an old jam jar, it melted beautifully not a trace of crystallization or separation occurred, and it took half the usual time... will look into the why all I know is that I kept the jar till the sun came up to take the picture and share this....#excitingstuff #chocolate #meltingchocolate #yum #jamjars #petitastuce #yumyum #miam #bonappetitmag #instafollow #instalike #instafollow #baking #bakers #pastry #paris #cookingtips #chocaholic
